Pauline Haddad DiTommaso spent 22 years as a food writer/restaurant reviewer, caterer and cooking instructor before friends and family convinced her to pursue creating her legendary chocolate confections full time. Pauline took a leave of absence from her review column and began to tweak recipes, committed to the belief that to achieve the best results one must use the highest quality products. Among the ingredients she consistently uses are: Ghirardelli cocoa and chocolate, Cabot butter, Baldwin vanilla, Hood cream, Domino sugar, Diamond walnuts and Planter’s peanuts. Her confections are handmade in small batches to insure consistent quality and freshness. Within months she had a thriving wholesale business to gourmet and gift shops throughout Massachusetts and has now added a retail internet store with chocolateparadise.net.
